8th Day of Christmas Recipe

Cranberry Christmas Cake made fresh in the Alto-Shaam Vector Oven


3 Eggs
2 Cups Sugar
¾ Cups Butter, softened
1 tsp Vanilla
2 Cups AP Flour
12 oz. Fresh Cranberries


Step 1

Preheat the Alto-Shaam Vector Oven to 350 degrees with 30% fan speed. With a mixer, beat eggs with the sugar until slightly thickened and light in color for about 5-7 minutes. The mixture should almost double in size. This mixture should form a ribbon when you lift the beaters out of the bowl.

Step 2

Add the butter and vanilla, and mix for two more minutes. Stir in the flour until just combined. Add the cranberries and stir to mix.

Step 3

Spread into a buttered 9x13 pan. Place in the Vector for about 15-20 minutes, or until very lightly browned and a toothpick inserted in the center comes out clean.

Step 4

Let cool completely before cutting and serving.
