1st Day of Christmas Recipe

Fire Roasted Tomato Sauce using the Wood Stone Fire Deck & PacoJet 2 Plus

INGREDIENTS

10 Cups Fresh Roma Tomatoes, quartered
4 TBSP Sunflower Oil
2 TBSP Balsamic Vinegar
10 Garlic Cloves, whole
1/3Cup Tightly packed fresh Basil
Salt & Pepper to taste

Step 1

Preheat Wood Stone Fire Deck to 500 degrees.

Step 2

Wash tomatoes and cut them in half (or quarters for large tomatoes).

Drizzle a light coat of oil on a cookie sheet, then place tomatoes on the cookie sheet.

Peel garlic cloves and place them whole on the tomatoes.

Tear half of the fresh basil into small pieces, add to the cookie sheet.

Add salt & pepper.

Roast for 30-40 minutes.

Add remaining fresh basil and vinegar over everything.

After they have roasted, let the tomatoes cool a bit.

Put tomatoes in a PacoJet 2 Plus beaker, using the 2-blade cutter, Pacotize the entire beaker with a repeat of X 3.

Season with more salt & pepper to taste and enjoy on your favorite pasta.
