How to Make Cold Smoked Raw Salmon in an Alto-Shaam Combi

INGREDIENTS
1 lb. Salmon Fillet
1 cup Marinade of choice
1 ½ cups Water soaked Wood Chips

Step 1

Cover a half-sheet pan with foil then place icing rack on foil-covered sheet pan.

Step 2

Place Salmon fillet on rack and marinade Raw Salmon Filet for 1 hour.

Step 3

Place water-soaked wood chips in smoke box.

Step 4

Make sure oven settings match below, place marinated salmon in oven and smoke.

Cold Smoke-Convection Temp “0”
Be sure you hit the “COLD SMOKE Button”

Step 2

Combi/Steam
Now Combi with 20% fan & 100% Humidity

Re-therm in Vector: 425/3 min/80%
